Thai Chicken Pizza

Ingredients
2 tsp cashews
1 tsp oil
½ red onion
250g continental [jar] Thai peanut curry sauce
2 thigh fillets – diced small
¼ cup Greek yoghurt
½ cup bean shoots
¼ Lebanese cucumber
2 tsp coriander leaves
Method
Preheat oven to 250c
Place cashews on a baking tray and roast for 3-4minutes or until golden
Heat oil in a large pan over high heat
Add onion and chicken and cook for 2-3 minutes or until chicken has browned and onion has softened
Add Thai Peanut Curry sauce and cook over high heat a further 6-8 minutes or until sauce has thickened and reduced
Spread pizza base with chicken sauce then place the whole pizza straight onto your oven shelf
Bake for 5 minutes or until warmed through and base is crisp underneath
While pizza is cooking combine bean shoots and cucumber and coriander
Scatter over top of pizza, finishing with cashews and dollops of yoghurt
