Date and Sesame Loaf / Muffins

Ingredients
  • 1 cup wholemeal SR flour
  • ½ cup wheatgerm
  • ¼ cup sugar
  • ¾ cup dates
  • ¼ cup milk
  • ¼ cup sesame seeds
  • 60 g margarine
  • 1 egg
  • 2 T honey
  • ½ cup yoghurt
  • ½ teaspoon bicarbonate soda
Method
  • Sift flour and bi-carb. Soda. Return husks to bowl
  • Add wheatgerm, sugar, chopped dates and sesame seeds
  • Place margarine and milk in a saucepan. Heat until butter melts
  • Allow to cool, mix in honey, egg and yoghurt
  • Add to dry mix. Mix only to combine the ingredients
  • Place into a greased loaf tin or muffin tin
  • Bake at 180o C for 40-45 minutes for a loaf or 20 minutes for muffins
  • The mix is cooked when a skewer, inserted is removed and clean. Cool on a rack
