Lamb Shanks (Pressure Cooker)

Ingredients
  • 4 Lamb Shanks, trimmed
  • 1 tspn Oregano
  • 60 grams Plain Flour
  • 2 Tblspn Tomato Paste
  • 2 Tblspn Olive Oil
  • 1 Med Tomato, quartered
  • 1 Large onion, chopped
  • 1 cup Beef Stock
  • 2 Carrots , cut into chunks
  • 2 Garlic Clove, crushed
  • Seasonings to taste
Method
  • Put flour and some seasonings in a plastic bag and toss the Shanks in it to cover.
  • Heat oil in fry pan and brown Lamb Shanks, then put in Pressure Cooker.
  • Put in all other ingredients, having mixed them all together.
  • Lock lid and cook for 25 mins.
  • Release pressure
  • Remove Shanks to plate, and pour liquid into saucepan to reduce , thicken with 2 Tblspn Flour if you like.
