Sweet and Sour Pork

Ingredients
  • 1/3 cup brown vinegar
  • ¾ cup brown sugar
  • 1 Tablespoon soya sauce
  • 3 teaspoons cornflour
  • ¾ cup water
  • 60 g copha
  • 1 sliced cucumber
  • 1 cup sliced onions
  • 1 kg uncooked rindless pork
  • 2 teaspoons soya sauce (extra)
  • 2 teaspoons plain flour
  • 1 cup water (extra)
Method
  • SWEET AND SOUR SAUCE
  • Mix together sugar, soya sauce, water, vinegar and cornflour
  • Cook over low heat in a double boiler – stirring frequently until thickened
  • PORK
  • Cut rindless pork into pieces (squares) and boil in 1 cup water for 25 minutes
  • Cool meat
  • Put copha in hot pan and fry sliced onions and sliced cucumber till tender
  • Remove onions and cucumber and add to sweet and sour sauce
  • Take extra 2 teaspoons soya sauce and 2 teaspoons plain flour - roll the meat in soya sauce then flour ensuring each cube is covered well
  • Fry meat in left over copha until crisp and brown
  • Drain off fat
  • Mix meat with sweet and sour sauce – heat all together in a pan
