Taco’s with A Twist

Information about Linda: Linda was born In Charleville, and currently lives in Moore Park Beach, 20km North of Bundaberg. She is very passionate about cooking and loves creating her own dishes! I am very appreciative that Linda is supporting her friend me (mark hull), and willing to share some of her recipes with us here on cooking.com.au


Information about this recipe: A 30 minute meal that is very nutritious with minimal fat, as turkey meat is lean, and black bean are very high in protein and fibre. It tastes great too.

Ingredients
  • 500 grams turkey mince
  • 1 can black beans mashed (I just use a potato masher)
  • 1 onion diced
  • 1 teaspoon crushed garlic
  • 1 packet taco shells
  • 1 tablespoon extra virgin olive oil
  • Taco sauce to your liking (I like hot)
Method
  • Heat pan and add oil, cook onion and garlic
  • Add turkey mince and cook until brown
  • Add mashed black beans and stir through
  • Add about 1/3 cup of water and reduce heat
  • Cook for 20 mins. Mixture should be nice and thick. Add a little water if required.
  • Meanwhile follow directions to cook taco shells in the oven. ( line a tray with alfoil so I don’t have to wash the pan)
