Pineapple Cheesecake

Ingredients
  • 500 g Crushed sweet biscuits
  • 5 Tblspn Margarine, softened
  • 4 Tblspn Hot Water
  • 1 Tblspn Gelatine dissolved in 1/2 cup hot water
  • 1 pkt Cream Cheese, beaten till smooth
  • 1/2 cup Sugar
  • 1 tspn Vanilla Essence
  • 1/4 cup Lemon Juice
  • 450 g Crushed Pineapple, drained, reserving 1/4 cup juice
  • 300 ml Cream
Method
  • Combine biscuits, Margarine and water and press into tin, then refrigerate
  • Mix Cream Cheese, sugar, vanilla, lemon juice, crushed pineapple and cream
  • Stir in gelatine mix and pineapple juice
  • Pour into biscuit shell and refrigerate until set
