Cornflake Crunch Slice

Ingredients
  • 1 1/2 cups Cornflakes, crushed
  • 1 1/2 cups SR Flour
  • 1 cup Brown Sugar
  • 10 Tblspn Margarine, level and melted
  • LEMON ICING
  • 125g butter
  • 2 tablespoons lemon juice
  • 1/2 teaspoon vanilla essence
  • 3 cups (470g) icing sugar
Method
  • Combine all dry ingredients in bowl
  • Stir in margarine
  • Press into slice tin
  • Cook in 180C oven for 25 minutes
  • Cool then spread on icing
  • LEMON ICING
  • Combine the butter, lemon juice, vanilla and icing sugar then beat until light and fluffy
  • Add more sugar or lemon juice to adjust the consistency as needed
