Cream of Mushroom Soup

Ingredients
  • 1 Tblspn Butter
  • 1 Small onion, chopped
  • 1 Garlic Clove, crushed
  • 500 g Mushrooms sliced
  • 3 cups Hot Water
  • 2 Vege Stock Cubes
  • 1/2 tspn Thyme
  • 1 cup Cream
  • 2 Tblspn Fresh Parsley, chopped
Method
  • Heat butter, add onion and garlic
  • Add mushrooms and cook until soft
  • Stir in water, stock and thyme- bring to boil
  • Remove and stand for 10 minuutes
  • Blend soup until smooth
  • Return to pan, add cream and 1/2 parsley
  • Stir gently until heated
  • Serve with parsley on top
