Chocolate Surprise Muffins

Ingredients
  • 2 ½ cups plain flour
  • 4 teaspoons baking powder
  • ¼ cup cocoa
  • 1 teaspoon cinnamon
  • 100g butter
  • 1 cup soft brown sugar
  • 1 ½ cups milk
  • 1 egg
  • 100 g cooking chocolate
  • 12 pieces of “surprises” (chocolate chips, white chocolate chunks, dried cherries, blueberries, Nutella, lemon butter or your favorite jam)
Method
  • Prepare self, set oven, prepare pan (grease well)
  • Sift flour, baking powder, cocoa and cinnamon into a bowl
  • Rub in butter with tips of fingers to resemble coarse breadcrumbs
  • Stir in brown sugar
  • Melt chocolate over simmering water
  • Beat egg and milk together
  • Make a well in the centre, add milk mixture and melted chocolate
  • Mix to combine ONLY
  • Spoon mixture into muffin tins to ⅔ fill cavityv
  • Push a “surprise” into the muffin to cover
  • Bake at 180°C for 10-15 minutes or until muffins spring back when lightly touched
