Bacon & Onion Jam

Ingredients
- 12 Bacon Rashers, diced small, and cook till light brown
- 6 Large red onions, diced reasonably small
- 1 cup Sugar
- ¾ cup Red Wine Vinegar
- 2 Tblspns Dried /Fresh Thyme
Method
- After cooking bacon, remove to plate to drain
- Cook onion in pan in 2 Tblspn oil on low for 30 mins until onion is tender
- Return bacon to pan with sugar, vinegar and thyme
- Cook partially covered on low, stirring occasionally for 30 mins
- Cook uncovered for a further 10-20 mins until mix is a jam like consistency
- Spoon into jars
