Banana Oat Pancakes
Recipe supplied by: Kelly Conlon
Ingredients
- 3/4 cup of gluten free oats
- 2 eggs
- 2 ripe bananas
- 1 1/2 teaspoons cinnamon
- Half a scoop of vanilla protein powder
- Optional blueberries, strawberries, or other toppings
Method
- Place a pancake griddle or pan on the stove over medium- low heat. It’s important to preheat your griddle or else you won’t have the golden pancake colour
- Add oats to food processor and blend them into a flour
- Add the bananas, eggs, cinnamon, and vanilla complete protein powder to the food processor. Don’t over blend it, just batter nice and smooth.
- Lightly grease the pan. If using butter don’t over do it or the pancakes will look blotchy and won’t achieve that smooth look
- Pour the batter on the griddle in small circles .
- When the batter begins to bubble and the bottom is golden (usually around 2-3 minutes), flip the pancakes.
- Cook for another 2-3 minutes until golden.
