




Boiled Pineapple Fruit Cake

Ingredients
- 450 g Crushed Pineapple and juice
- 1 cup sugar
- 375 g Mixed Fruit
- 1 tspn Mixed Spice
- 1 tspn Bi Carb Soda
- 125 g Margarine
- 1 cup SR Flour
- 1 cup Plain Flour
- Pinch Salt
- 2 Eggs
Method
- Grease and paper choice of tin-- down below
- Boil & Simmer for 3 minutes- fruit, sugar, Spices and margarine
- Cool to room temperature
- Add flours, bi carb soda, salt and eggs
- Cook in 180C Oven
- 1 mix and 1 1/2 mix in round or square tins = 1 1/2 hours
- *** 21st Key Tin- 3 mixes-3 hours in 170C oven ***
- 4 layers Greaseproof / Brown Paper
- Alfoil on top for 75% of time to stop burning
