




Butternut Drops

Ingredients
- ½ cup margarine
- ¼ cup sugar
- 1 egg (separated)
- ½ teaspoon vanilla
- ¼ teaspoon salt
- 1 cup flour
- 1 tablespoon lemon juice
- 1 tablespoon lemon rind (zest)
- 2 tablespoons orange rind (zest)
- ½ cup Butternut Drops – finely ground
- Cherries for decoration
Method
- Cream margarine and sugar well
- Add egg yolk and vanilla – beat well
- Sift dry ingredients together
- Add lemon juice and rind (zest)
- Mix all ingredients thoroughly and place in a covered bowl
- Chill in fridge for about an hour
- Roll into tiny balls (about ½ teaspoon)
- Dip balls in slightly beaten egg white
- Roll in ground nuts
- Place on a greased tray lined with baking paper about 2.5 cm (1”) apart
- Press ½ cherry on top of each ball and bake at 180 deg for about 25 minutes
