Caesar Salad

Ingredients
- CAESAR SALAD
- 1 Cos Lettuce
- 4 Bacon Rashers
- 4 slices White Bread
- 80g Parmesan Cheese Block
- 4 Anchovy Fillets
- Butter
- 350 ml Caesar Dressing
- CAESAR DRESSING
- 2 Cloves Garlic
- 2 Egg Yolks
- 5ml Vinegar
- 5 ml Dijon Mustard
- Salt & Pepper
- 250ml Olive Oil
- 10ml Hot Water Approx
Method
- CAESAR DRESSING
- Place egg yolks, vinegar and seasoning in bowl and whisk well
- Gradually add oil slowly whisking continuously until all the oil is incorporated
- Add boiling water to stabilise the mayonnaise
- Add crushed garlic and adjust seasoning
- ASSEMBLY OF SAESAR
- Wash Lettuce
- Dice bacon and sauté
- Prepare croutons and pan fry using clarified butter
- Assemble and dress for service
