Caesar Salad

Ingredients
  • CAESAR SALAD
  • 1 Cos Lettuce
  • 4 Bacon Rashers
  • 4 slices White Bread
  • 80g Parmesan Cheese Block
  • 4 Anchovy Fillets
  • Butter
  • 350 ml Caesar Dressing
  • CAESAR DRESSING
  • 2 Cloves Garlic
  • 2 Egg Yolks
  • 5ml Vinegar
  • 5 ml Dijon Mustard
  • Salt & Pepper
  • 250ml Olive Oil
  • 10ml Hot Water Approx
Method
  • CAESAR DRESSING
  • Place egg yolks, vinegar and seasoning in bowl and whisk well
  • Gradually add oil slowly whisking continuously until all the oil is incorporated
  • Add boiling water to stabilise the mayonnaise
  • Add crushed garlic and adjust seasoning
  • ASSEMBLY OF SAESAR
  • Wash Lettuce
  • Dice bacon and sauté
  • Prepare croutons and pan fry using clarified butter
  • Assemble and dress for service
