




Cherry Nut Slice

Ingredients
- BASE
- 1 cup plain flour
- 1/2 cup icing sugar
- 100 g butter
- TOPPING
- 2 eggs
- 1/2 cup sugar
- 1 cup coconut
- 1/2 cup SR flour
- 100 g walnuts (roughly chopped)
- 100 g glazed cherries (chopped)
Method
- BASE
- Sift flour and icing sugar into a bowl
- Rub in butter and knead well
- Press into a greased 28 x 18 cm (11" x 7") baking tin
- TOPPING
- Combine eggs and sugar
- Beat well until thick
- Add coconut, roughly chopped walnuts, chopped cherries and sifted flour
- Mix well
- Spread topping over the base and cook in moderate oven (180 deg C) 25-30 minutes (or until cooked)
- Cool before cutting into squares
