Chicken and Mushroom Penne

Ingredients
- 400 g Penne Pasta, cooked and drained
- 1 Tblspn Oil
- 500 g Chicken Strips
- 500 g Mushrooms, sliced
- 1 cup Chicken Stock
- 250 g Tub light Spreadable Cream Cheese
- 1/4 cup Chives, finely chopped
- Grated Parmesan
Method
- Heat oil in frypan on medium heat and cook chicken until brown
- Add mushrooms and cook further 5 minutes
- Reduce heat to low, add cream cheese and stock
- Simmer for 3 minutes, then remove and add chives
- Add suce to pasta and serve immediately, with sprinkled parmesan
