Chicken Chow Mein

Ingredients
- Chicken Breast Fillet / 300 grams
- Noodles / 100 grams
- Mixed vegetables / 1/2 litre volume
- Water Chestnuts - Broccoli - Celery - Onions - Carrots - Beans - Chinese Cabbage
- Chicken Stock / 1 cup
- Dark Soy Sauce / 2 teaspoons
- Corn Flour Mixture / 2 teaspoons
- Oyster Sauce / 2 teaspoons
Method
- Pan fry noodles - put on plate.
- 300 Grams of Chicken Breast fillets / sliced & Marinated.
- Marinate mixture - 2 teaspoons of cooking oil - 2 teaspoons corn flour mix [water & corn flour] Sprinkle of dry Sherry wine - soy sauce to taste. [let chicken Marinate in fridge over night]
- Blanch vegetables in boiling hot water [30 Seconds] drain well.
- Heat wok with medium heat then turn to high heat until hot.
- Add cooking oil - put in chicken [lay flat around surface] fry as you would with steak to seal, turn the chicken over and keep on frying until 70% cooked. Add 2 teaspoons of oyster sauce and 1 cup of chicken stock, heat until fully cooked.
- While stirring add vegetables and two teaspoons of dark soy sauce, thicken with corn flour mixture.
