Chocolate Fudge Short Spread

Information about Jenny: Jenny Gibbons (my mother) is a country woman who grew up and lived on the land around the remote Wanaaring area for the first 60 years of her life. She still lives on a few acres about ten minutes out of Dubbo with my father, which they both love. Over the years of living on the land, Mum accumulated many recipes which were either handed down from other family members or given to her by other ladies living on the land, from around the community.

Ingredients
  • BASE
  • 100 g butter
  • 1/2 cup castor sugar
  • 1.5 cups plain flour
  • FUDGE
  • 100 g butter
  • 1/2 cup castor sugar
  • 2 tablespoons golden syrup
  • 2/3 cup condensed milk
  • CHOCOLATE ICING
  • 50 g dark (or milk) chocolate
  • 50 g butter
Method
  • BASE
  • Cream butter and sugar until light and fluffy
  • Sift flour and gradually add to cream mixture (making into a firm dough)
  • Press into greased flat tin
  • Bake in a moderate oven (180 deg C) 20-25 minutes until golden brown
  • Cool in tin
  • FUDGE
  • Place all ingredients into a saucepan
  • Bring slowly to the boil stirring constantly
  • Simmer gently for 4 minutes without stirring
  • (Mixture will catch a little on the base of the saucepan)
  • Pour over base and cool
  • water
  • CHOCOLATE ICING
  • Melt chocolate in a bowl over hot
  • Add butter and stir well
  • Spread over cool fudge
  • When set cut into fingers
