




Chocolate Surprise Muffins

Ingredients
- 2 ½ cups plain flour
- 4 teaspoons baking powder
- ¼ cup cocoa
- 1 teaspoon cinnamon
- 100g butter
- 1 cup soft brown sugar
- 1 ½ cups milk
- 1 egg
- 100 g cooking chocolate
- 12 pieces of “surprises” (chocolate chips, white chocolate chunks, dried cherries, blueberries, Nutella, lemon butter or your favorite jam)
Method
- Prepare self, set oven, prepare pan (grease well)
- Sift flour, baking powder, cocoa and cinnamon into a bowl
- Rub in butter with tips of fingers to resemble coarse breadcrumbs
- Stir in brown sugar
- Melt chocolate over simmering water
- Beat egg and milk together
- Make a well in the centre, add milk mixture and melted chocolate
- Mix to combine ONLY
- Spoon mixture into muffin tins to ⅔ fill cavityv
- Push a “surprise” into the muffin to cover
- Bake at 180°C for 10-15 minutes or until muffins spring back when lightly touched
