Cornflake Crunch Slice

Ingredients
- 1 1/2 cups Cornflakes, crushed
- 1 1/2 cups SR Flour
- 1 cup Brown Sugar
- 10 Tblspn Margarine, level and melted
- LEMON ICING
- 125g butter
- 2 tablespoons lemon juice
- 1/2 teaspoon vanilla essence
- 3 cups (470g) icing sugar
Method
- Combine all dry ingredients in bowl
- Stir in margarine
- Press into slice tin
- Cook in 180C oven for 25 minutes
- Cool then spread on icing
- LEMON ICING
- Combine the butter, lemon juice, vanilla and icing sugar then beat until light and fluffy
- Add more sugar or lemon juice to adjust the consistency as needed
