Cous Cous Salad

Ingredients
- 250 g Cous Cous - cooked to packet directions
- 1 tablespoon melted butter
- 100 g mixed sultanas and dried apricots
- 80 g pine nuts
- 2 cups baby spinach leaves
- 2 cups roasted pumpkin (chopped small after being roasted)
- Chopped roasted onion
Method
- Toss all ingredients together
