Cream of Mushroom Soup

Ingredients
- 1 Tblspn Butter
- 1 Small onion, chopped
- 1 Garlic Clove, crushed
- 500 g Mushrooms sliced
- 3 cups Hot Water
- 2 Vege Stock Cubes
- 1/2 tspn Thyme
- 1 cup Cream
- 2 Tblspn Fresh Parsley, chopped
Method
- Heat butter, add onion and garlic
- Add mushrooms and cook until soft
- Stir in water, stock and thyme- bring to boil
- Remove and stand for 10 minuutes
- Blend soup until smooth
- Return to pan, add cream and 1/2 parsley
- Stir gently until heated
- Serve with parsley on top
