




Easy Chicken Curry

Ingredients
- 1 Tblspn Oil
- 500 g cubed chicken thighs
- 1 Onion, chopped
- 1 Carrot, chopped
- 2 Potatoes, cubed
- 1 Celery Stick, sliced
- 1 dstpn Curry Powder
- 1 1/2 cups Water
- 1 Tblspn Chicken Stock Powder
- 375 ml Carnation Milk
- 2 Tblspn Cornflour
- 1/4 cup Frozen Peas
- 1/4 cup Frozen Corn
- 1 T Brown Sugar
Method
- Heat oil, brown chicken in batches and remove
- Cook onion, carrot, potatoes and celery for 3 minutes
- Add curry, water and stock and boil
- Return Chicken and simmer covered for 15 minutes
- Add milk and cornflour and brown sugar
- Stir in peas and corn
- Reduce heat and simmer for 3 minutes
