Easy Chicken Curry

Ingredients
  • 1 Tblspn Oil
  • 500 g cubed chicken thighs
  • 1 Onion, chopped
  • 1 Carrot, chopped
  • 2 Potatoes, cubed
  • 1 Celery Stick, sliced
  • 1 dstpn Curry Powder
  • 1 1/2 cups Water
  • 1 Tblspn Chicken Stock Powder
  • 375 ml Carnation Milk
  • 2 Tblspn Cornflour
  • 1/4 cup Frozen Peas
  • 1/4 cup Frozen Corn
  • 1 T Brown Sugar
Method
  • Heat oil, brown chicken in batches and remove
  • Cook onion, carrot, potatoes and celery for 3 minutes
  • Add curry, water and stock and boil
  • Return Chicken and simmer covered for 15 minutes
  • Add milk and cornflour and brown sugar
  • Stir in peas and corn
  • Reduce heat and simmer for 3 minutes
