Easy Lemon Meringue Pie

Ingredients
  • 1 Sheet Short Crust Pastry OR 1 Pampas Sweet Flan Case
  • 1/3 cup Cornflour
  • 1 1/2 cups Water
  • 4 Egg Yolks
  • 1/2 cup Lemon Juice
  • 1 tspn finely grated Lemon Rind
  • 3/4 cup Sugar
  • 1 T Butter
  • 4 Egg Whites
  • 1/2 cup Sugar (extra)
Method
  • Grease Flan Tin and line with pastry
  • Bake in 180C oven until brown
  • Mix all ingredients except whites and extra sugar in bowl
  • Microwave in 2 minute lots until thick
  • Spread into pie case
  • Reduce oven to 160C
  • Beat egg whites until thick
  • Add extra sugar and beat until glossy
  • Spoon over filling
  • Bake 15-20 minutes until golden
