Easy Lemon Meringue Pie

Ingredients
- 1 Sheet Short Crust Pastry OR 1 Pampas Sweet Flan Case
- 1/3 cup Cornflour
- 1 1/2 cups Water
- 4 Egg Yolks
- 1/2 cup Lemon Juice
- 1 tspn finely grated Lemon Rind
- 3/4 cup Sugar
- 1 T Butter
- 4 Egg Whites
- 1/2 cup Sugar (extra)
Method
- Grease Flan Tin and line with pastry
- Bake in 180C oven until brown
- Mix all ingredients except whites and extra sugar in bowl
- Microwave in 2 minute lots until thick
- Spread into pie case
- Reduce oven to 160C
- Beat egg whites until thick
- Add extra sugar and beat until glossy
- Spoon over filling
- Bake 15-20 minutes until golden
