




Fig Jam

Ingredients
- 1 kg Figs, chopped roughly
- 1 kg Sugar
- 1 tspn Ginger, ground
- 1 Lemon squeezed
Method
- Remove stalks from figs and cut roughly, do not peel
- Use half sugar to cover figs in pot, stir well and leave til juices rise
- Cook over medium heat and bring to boil, stirring to keep fruit off bottom of pot
- Cook til tender then add remaining sugar, ginger and lemon
- Cook till set when tested with cold spoon and saucer
- Blitz with stick blender, cool and pour into jars
