Information about this recipe: General rule of thumb for mix, just multiply to suit amount of figs

Ingredients
  • 1 kg Figs, chopped roughly
  • 1 kg Sugar
  • 1 tspn Ginger, ground
  • 1 Lemon squeezed
Method
  • Remove stalks from figs and cut roughly, do not peel
  • Use half sugar to cover figs in pot, stir well and leave til juices rise
  • Cook over medium heat and bring to boil, stirring to keep fruit off bottom of pot
  • Cook til tender then add remaining sugar, ginger and lemon
  • Cook till set when tested with cold spoon and saucer
  • Blitz with stick blender, cool and pour into jars
