Ham and Cheese Croquettes

Ingredients
  • 300 g Ham, finely chopped
  • 2 cups Cold Mashed Potato
  • 1 Egg Yolk
  • 2 Shallots, finely chopped
  • 3/4 cup Plain Flour
  • 40 g Mozarella Cheese, cut into 1 cm cubes
  • 1 1/2 cups Fresh Breadcrumbs
  • 1 Egg
  • 1/4 cup Milk
  • Oil for shallow Frying
Method
  • Cook ham until brown, then drain
  • Mix potato, yolk, onion, ham and 1/4 cup flour in a bowl
  • Roll heaped Tblspns of mix into 20 balls
  • Push 1 cheese cube into centre of each ball and the mould to enclose
  • Place remaining flour on a plate, breadcrumbs on another plate
  • Whisk egg and milk in a bowl (egg wash)
  • Roll balls in flour, then milk and coat in breadcrumbs
  • Heat oil over medium high heat and cook croquettes in batches, turning, for 3-4 minutes until golden
  • Drain on paper
