Ham and Cheese Croquettes

Ingredients
- 300 g Ham, finely chopped
- 2 cups Cold Mashed Potato
- 1 Egg Yolk
- 2 Shallots, finely chopped
- 3/4 cup Plain Flour
- 40 g Mozarella Cheese, cut into 1 cm cubes
- 1 1/2 cups Fresh Breadcrumbs
- 1 Egg
- 1/4 cup Milk
- Oil for shallow Frying
Method
- Cook ham until brown, then drain
- Mix potato, yolk, onion, ham and 1/4 cup flour in a bowl
- Roll heaped Tblspns of mix into 20 balls
- Push 1 cheese cube into centre of each ball and the mould to enclose
- Place remaining flour on a plate, breadcrumbs on another plate
- Whisk egg and milk in a bowl (egg wash)
- Roll balls in flour, then milk and coat in breadcrumbs
- Heat oil over medium high heat and cook croquettes in batches, turning, for 3-4 minutes until golden
- Drain on paper
