Herbed Chicken & Cranberry Club Sandwich

Ingredients
  • 24 slices thick wholemeal OR white bread
  • 10 tablespoons softened butter
  • 1 chicken, cooked, cooled and chopped
  • 1 cup Ocean Spray Sweetened Dried Cranberries
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped coriander
  • 2 tablespoons chopped chives
  • 4 spring onions, chopped
  • 3/4 cup Whole Berry Cranberry Sauce
Method
  • Butter bread
  • Mix together chicken, mayonnaise, herbs, spring onions, and salt and pepper to taste
  • Spread an even layer of chicken mixture onto half the slices of bread
  • Spread the remaining slices with the Cranberry Sauce
  • Top chicken with cranberry slices to make a sandwich. Press lightly
  • Stack sandwiches in a clean tea towel and refrigerate until needed (3-4 hours maximum)
  • Trim crusts from sandwiches. Cut into 3-4 finger lengths and serve.
