Herbed Chicken & Cranberry Club Sandwich

Ingredients
- 24 slices thick wholemeal OR white bread
- 10 tablespoons softened butter
- 1 chicken, cooked, cooled and chopped
- 1 cup Ocean Spray Sweetened Dried Cranberries
- 1/2 cup mayonnaise
- 2 tablespoons chopped coriander
- 2 tablespoons chopped chives
- 4 spring onions, chopped
- 3/4 cup Whole Berry Cranberry Sauce
Method
- Butter bread
- Mix together chicken, mayonnaise, herbs, spring onions, and salt and pepper to taste
- Spread an even layer of chicken mixture onto half the slices of bread
- Spread the remaining slices with the Cranberry Sauce
- Top chicken with cranberry slices to make a sandwich. Press lightly
- Stack sandwiches in a clean tea towel and refrigerate until needed (3-4 hours maximum)
- Trim crusts from sandwiches. Cut into 3-4 finger lengths and serve.
