Ingredients
  • 150 g Plain Flour
  • 3/4 tspn Bicarb Soda
  • 1 tspn Ground Cinnamon
  • 125 g Brown Sugar
  • 2 Eggs, slightly beaten
  • 100 ml Sunflower Oil
  • 1 ripe bananas, mashed
  • 2 Pineapple Slices, chopped finely
  • 25 g Pecan Nuts, chopped
  • TOPPING / ICING
  • 140g Cream Cheese
  • 70g soft butter
  • 1 tspn Vanilla Essence
  • 280g Icing Sugar
Method
  • Preheat oven 180C and put 12 Patty Cases on a tray
  • Sift flour, bicarb and Cinnamon in a bowl then stir in brown sugar
  • Add eggs, oil, banana, pineaplle and pecans - mix well
  • Spoon mixture into paper cases and bake for 15-20 minutes. Cool
  • TOPPING / ICING
  • Mix all ingredients until smooth and creamy
  • Spread over top of cooled cakes
