




Hummingbird Patty Cakes

Ingredients
- 150 g Plain Flour
- 3/4 tspn Bicarb Soda
- 1 tspn Ground Cinnamon
- 125 g Brown Sugar
- 2 Eggs, slightly beaten
- 100 ml Sunflower Oil
- 1 ripe bananas, mashed
- 2 Pineapple Slices, chopped finely
- 25 g Pecan Nuts, chopped
- TOPPING / ICING
- 140g Cream Cheese
- 70g soft butter
- 1 tspn Vanilla Essence
- 280g Icing Sugar
Method
- Preheat oven 180C and put 12 Patty Cases on a tray
- Sift flour, bicarb and Cinnamon in a bowl then stir in brown sugar
- Add eggs, oil, banana, pineaplle and pecans - mix well
- Spoon mixture into paper cases and bake for 15-20 minutes. Cool
- TOPPING / ICING
- Mix all ingredients until smooth and creamy
- Spread over top of cooled cakes
