




Lamb Shanks (Pressure Cooker)

Ingredients
- 4 Lamb Shanks, trimmed
- 1 tspn Oregano
- 60 grams Plain Flour
- 2 Tblspn Tomato Paste
- 2 Tblspn Olive Oil
- 1 Med Tomato, quartered
- 1 Large onion, chopped
- 1 cup Beef Stock
- 2 Carrots , cut into chunks
- 2 Garlic Clove, crushed
- Seasonings to taste
Method
- Put flour and some seasonings in a plastic bag and toss the Shanks in it to cover.
- Heat oil in fry pan and brown Lamb Shanks, then put in Pressure Cooker.
- Put in all other ingredients, having mixed them all together.
- Lock lid and cook for 25 mins.
- Release pressure
- Remove Shanks to plate, and pour liquid into saucepan to reduce , thicken with 2 Tblspn Flour if you like.
