Information about this recipe: This recipe was passed onto Karen from her Aunty Betty, who also lived in the Wanaaring area for many years. This recipe is a big hit with Karen's family.

Ingredients
  • 8 Lemons, squeezed (500 ml)
  • 2 Lemons grated rind
  • 500 g Sugar (2 1/4 cups)
  • 6 Eggs
  • 125 g Margarine
Method
  • Beat eggs, margarine and sugar in a 2L jug/bowl
  • Add juice and rind
  • Cook on High in Microwave 3 minutes
  • Mix with electric mixer
  • Cook 3 minutes, mix
  • Repeat mixing and cooking for 3 minutes until it thickens - approx 3 times
  • Bottle in warm jars
  • Cool and put on lids
