Lemon Butter

Ingredients
- 8 Lemons, squeezed (500 ml)
- 2 Lemons grated rind
- 500 g Sugar (2 1/4 cups)
- 6 Eggs
- 125 g Margarine
Method
- Beat eggs, margarine and sugar in a 2L jug/bowl
- Add juice and rind
- Cook on High in Microwave 3 minutes
- Mix with electric mixer
- Cook 3 minutes, mix
- Repeat mixing and cooking for 3 minutes until it thickens - approx 3 times
- Bottle in warm jars
- Cool and put on lids
