Lemon Delicious

Ingredients
- 500 g Margarine
- 1 cup Sugar
- 2 Lemons grated
- 4 Eggs, separated
- 1/3 cup SR Flour
- 3 Lemons, juiced
- 1 1/2 cups Milk
- Pinch Cream of Tartar
Method
- Cream margarine, 1/2 sugar and lemon rind
- Beat egg yolks, flour, juice and milk
- Add to margarine mixture
- Beat egg whites, 1/2 sugar and tartar
- Gently fold into flour mix
- Pour into ovenproof dish
- Stand in tray of water - filled half way up side of ovenproof dish
- Bake in 160C oven for 3/4 hour or until set
