Information about Karen: Karen and her husband Les have inherited some wonderful recipes passed down from family members. She is an amazing "home" cook and everyone goes back for seconds. Karen has kindly shared some of her amazing recipes with us for this site.

Ingredients
  • 500 g Margarine
  • 1 cup Sugar
  • 2 Lemons grated
  • 4 Eggs, separated
  • 1/3 cup SR Flour
  • 3 Lemons, juiced
  • 1 1/2 cups Milk
  • Pinch Cream of Tartar
Method
  • Cream margarine, 1/2 sugar and lemon rind
  • Beat egg yolks, flour, juice and milk
  • Add to margarine mixture
  • Beat egg whites, 1/2 sugar and tartar
  • Gently fold into flour mix
  • Pour into ovenproof dish
  • Stand in tray of water - filled half way up side of ovenproof dish
  • Bake in 160C oven for 3/4 hour or until set
