Lemon Delicious Pudding

Ingredients
- 3 eggs (separated)
- 3/4 cup sugar
- 2 cups milk
- 1 tablespoon SR flour (sifted)
- 2 large lemons (grated rind and juice)
- 1/2 cup coconut
- Pinch of salt
- Extra 1/4 cup sugar
Method
- Beat egg yolks with 3/4 cup sugar until light and fluffy or creamy
- Beat in milk, flour, salt, lemon rind and lemon juice
- Stir in cocunut
- Beat egg whites and add extra (1/4 cup) sugar gradually
- Continue beating until stiff but not dry
- Fold into lemon coconut mixture
- Pour into a greased - deep 1.5 litre oven proof dish
- Place oven proof dish into a shallow pan of hot water
- Bake in moderate oven (180 deg C) for 45 minutes or until set and dessert is golden brown
