Ingredients
  • 2 kg Peeled Mandarins
  • 1.5 kg Sugar
  • 4 Lemons, juiced
Method
  • Peel Mandarins, then cut in half horizontally to pick out seeds
  • Place peeled Mandarins in the bowl of a food processor and pulse til blended and fairly smooth
  • Transfer to a large pot with sugar and lemon juice
  • Simmer for up to an hour until it sets. Time varies
  • Pour into hot sterilized bottles and cool then refrigerate
