Mandarin Jam

Ingredients
- 2 kg Peeled Mandarins
- 1.5 kg Sugar
- 4 Lemons, juiced
Method
- Peel Mandarins, then cut in half horizontally to pick out seeds
- Place peeled Mandarins in the bowl of a food processor and pulse til blended and fairly smooth
- Transfer to a large pot with sugar and lemon juice
- Simmer for up to an hour until it sets. Time varies
- Pour into hot sterilized bottles and cool then refrigerate
