Mango salsa on salmon

Ingredients
  • 1 Mango, mashed
  • 1/4 Coriander, chopped
  • 1 spring onion, finely chopped (white part only)
  • 1/2 red chilli (optional)
  • 1/2 lemon, juiced
  • Salmon, tail or middle section piece
  • Salt
Method
  • Turn oven on to 180°C. Place salmon on a baking tray and drizzle lightly with olive oil and sprinkle with salt. Cook for 35 minutes until lightly browned.
  • Mix all of the other ingredients together in a bowl. Place in refrigerator until ready to use.
  • Place desired amount of salsa on top of cooked salmon.
  • Great with salad or cooked vegetables and chips.
