Mango salsa on salmon

Ingredients
- 1 Mango, mashed
- 1/4 Coriander, chopped
- 1 spring onion, finely chopped (white part only)
- 1/2 red chilli (optional)
- 1/2 lemon, juiced
- Salmon, tail or middle section piece
- Salt
Method
- Turn oven on to 180°C. Place salmon on a baking tray and drizzle lightly with olive oil and sprinkle with salt. Cook for 35 minutes until lightly browned.
- Mix all of the other ingredients together in a bowl. Place in refrigerator until ready to use.
- Place desired amount of salsa on top of cooked salmon.
- Great with salad or cooked vegetables and chips.
