Meatball Soup

Ingredients
- One small bag of uncooked rice and turkey meat
- 1onion
- 4 celery sticks
- Half stick butter
- 2 roasted red peppers chopped, cilantro (coriander),
- 1/4 head chopped of Red and Green cabbage
- 2 carrots
- 2 cans diced tomatoes drained
- 1 can of tomato sauce
- 1 cup beef bouillon (broth or stock).
- Garlic, salt and pepper.
Method
- Mix one small bag uncooked rice and turkey meat together to form meatballs. Sautee in pan until golden brown, then set aside.
- Sautée 1 chopped Onion, 4 celery sticks in half stick butter in the stockpot.
- Add 2 roasted red peppers chopped, cilantro (coriander),
- Add 1/4 head chopped of Red and Green cabbage,
- Add 2 carrots chopped,
- Add 2 cans diced tomatoes drained,
- Add 1 can of tomato sauce
- Add 1 cup beef bouillon (broth or stock).
- Add garlic, salt and pepper to taste.
- Simmer for 20 min. Then add the meatballs.
- Let cook on low for one to two hours.
- Serve soup with green onion and more cilantro on top in bowl.
- Anything to your liking. Enjoy!

Serve soup with green onion and more cilantro (coriander) on top in bowl. You may add one dollop of sour cream on top or even cooked bacon pieces! ☺ |
