Microwave Risotto

Ingredients
- 2 T Margarine
- 2 T Oil
- 1 Onion, chopped finely
- 1 cup Aborio Rice
- 750 ml Chicken/Vege Stock
- 1 cup Frozen Peas & Corn
- 1/4 cup Grated Parmesan
- Salt & Pepper to taste
Method
- Cook oil and margarine on high for 1 minutes
- Add onion, mix and cook for 2 minutes
- Add rice, mix well and cook for 4 minutes
- Add stock, mix well and cook for 2 x 7 minutes
- Add vegs, mix well and cook for 1 minute
- Rest 5 minutes
- Mix in cheese and seasonings and dollop of butter
