




Mint Jelly

Ingredients
- 3 cups sugar
- 1 1/2 cups firmly packed mint leaves
- 1 cup white vinegar
- 3/4 cup water
- 1 Tblspn gelatine, dissolved in 1/4 cup hot water
- 1/2 cup finely chopped mint leaves, extra
Method
- In a saucepan combine sugar, mint leaves, vinegar and water
- Bring to boil on high, stirring until sugar dissolves
- Reduce heat and simmer for 10 minutes
- Stir dissolved gelatine through
- Strain and discard mint leaves
- Poor hot mix into jars
- Allow to cool until thickens then stir chopped mint through
