Pavlova Roll

Ingredients
- 4 Egg Whites
- Pinch Cream of Tartar
- 1 cup Sugar
- 1 dstpn Cornflour
- 1/2 tspn Vanilla Essence
- 1 dstpn White Vinegar
- 2 tspn Cinnamom
- 425 g Can Fruit Salad - drained
- 300 ml Whipped Cream
Method
- Pre heat oven to 180C
- Grease and line Lamington tin, dust with Cornflour
- Beat egg whites and tartar
- Add sugar and Vanilla, beat till stiff
- Spread in tin
- Bake 10-12 minutes
- Dust baking paper with cinnamon
- Turn pavlova onto it and sprinkle with rest of cinnamon
- Lay another piece of baking paper on top, roll up lengthwise and cool
- Fold fruit through cream
- Unroll pavlova and remove top layer of paper
- Spread with cream mix
- Roll up again, leaving behind paper
- Place on platter and decorate with grated chocolate, strawberries etc
