Peanut Caramel Squares

Ingredients
- BASE / DOUGH
- 1 cup plain flour
- 1/4 cup SR flour
- 2 tablespoons custard powder
- 125 g margarine (softened)
- 3/4 cup castor sugar
- 1 egg
- TOPPING
- 1/3 cup brown sugar
- 2 tablespoons golden syrup
- 90 g margarine
- 1 cup unsalted peanuts
- Melted chocolate to drizzle over the top
Method
- Pre-heat oven to 180 deg C
- Lightly grease and line a slice tin with baking paper
- BASE / DOUGH
- Sift flours and custard powder - set aside
- Cream margarine and sugar together
- Add egg and mix well
- Add sifted flours and custard powder and mix to a firm dough
- Press dough into greased slice tin and bake for 15 minutes
- TOPPING
- Mix sugar, golden syrup and margarine in a saucepan
- Stir over heat until sugar dissolves
- Simmer for 3 minutes continuously stirring
- Stir in peanuts
- Pour topping over warm base
- Return to oven and bake for a further 5-8 minutes
- Cool then cut into squares
- Drizzle melted chocolate over squares
