




Pineapple Cheesecake

Ingredients
- 500 g Crushed sweet biscuits
- 5 Tblspn Margarine, softened
- 4 Tblspn Hot Water
- 1 Tblspn Gelatine dissolved in 1/2 cup hot water
- 1 pkt Cream Cheese, beaten till smooth
- 1/2 cup Sugar
- 1 tspn Vanilla Essence
- 1/4 cup Lemon Juice
- 450 g Crushed Pineapple, drained, reserving 1/4 cup juice
- 300 ml Cream
Method
- Combine biscuits, Margarine and water and press into tin, then refrigerate
- Mix Cream Cheese, sugar, vanilla, lemon juice, crushed pineapple and cream
- Stir in gelatine mix and pineapple juice
- Pour into biscuit shell and refrigerate until set
