Plum Sauce

Ingredients
- 2.75 kg Plums, halved and deseeded
- 1.5 kg Sugar
- 1 tspn Cayenne Pepper
- 1/4 cup Cloves
- 3 Pints Vinegar
- 6 tspn Salt
- 1 Tblspn Black Pepper
- 1/2 cup Ground Ginger
Method
- Tie cloves in a cloth
- Add all ingredients to a large pot
- Bring to the boil and simmer until plums are cooked
- Remove cloves and puree
- Cool and Bottle
