Pumpkin Damper

Ingredients
- 400 g Butternut Pumpkin - cooled
- 1 Egg
- 1/4 cup Milk
- 2 1/2 cups SR Flour
- 1/4 tspn Cinnamon
- 2 Tblspn Margarine
- 1/4 cup Sugar
Method
- Mix pumpkin, egg and milk
- Sift flour and cinnamon
- Rub in butter
- Add sugar and pumpkin mixture
- Knead lightly and put on tray in a circle
- Press to 1 inch thick
- Brush with milk and sprinkle with sugar
- Mark into 8 wedges approx 1/2 " thick
- Bake in 180C oven for 30 mins or brown and hollow to touch
