Pumpkin Damper

Ingredients
  • 400 g Butternut Pumpkin - cooled
  • 1 Egg
  • 1/4 cup Milk
  • 2 1/2 cups SR Flour
  • 1/4 tspn Cinnamon
  • 2 Tblspn Margarine
  • 1/4 cup Sugar
Method
  • Mix pumpkin, egg and milk
  • Sift flour and cinnamon
  • Rub in butter
  • Add sugar and pumpkin mixture
  • Knead lightly and put on tray in a circle
  • Press to 1 inch thick
  • Brush with milk and sprinkle with sugar
  • Mark into 8 wedges approx 1/2 " thick
  • Bake in 180C oven for 30 mins or brown and hollow to touch
