




Queen Pudding

Ingredients
- 3 eggs (separated)
- 2 tablespoons sugar
- 2 1/2 cups warm milk (do not boil)
- Jam
- Thin slices of buttered bread
Method
- Spread jam over buttered bread - cut into thin strips
- Place bread strips cross ways in a pie dish until half full
- Mix egg yolks and sugar together - mix well
- Add warm milk to egg and sugar mixture
- Mix well together and add mixture to pie dish
- Put pie dish in a tray of water
- Cook in moderate oven (180 deg C) until set (about 1/2 hour)
- Allow to cool then spread a thin layer of jam on the top
- Beat egg whites until stiff and frothy - slowly add 1 tablespoon of sugar
- Add egg white mixture (meringue) to top of pudding
- Return to moderate oven until meringue is golden brown
