




Queen Pudding

Ingredients
- PUDDING MIXTURE
- 5 eggs
- 1 litre of milk
- 2 Tablespoons of sugar
- Throw in some sultanas if liked
- MERINGUE
- 3-4 egg whites
- 1 tablespoon of sugar
Method
- PUDDING MIXTURE
- Mix together the eggs, milk and sugar - ensure ingredients are mixed together well
- Pour into a pyrex dish
- Place pyrex dish in a baking dish
- Pour water into baking dish halfway up side of pyrex dish
- Cook in oven 160 - 180 deg C for about 1 hour until set - check by placing a knife in pudding
- MERINGUE
- Beat 3-4 egg whites until stiff and frothy - slowly add 1 tablespoon of sugar
- Add egg white mixture (meringue) to top of pudding
- Return to moderate oven until meringue is golden brown
