




Quince Jam

Ingredients
- 2 kg Prepared Quinces (peeled,cored and chopped roughly)
- 2 Litres Water
- 3 kg Sugar
- 2 Lemons, juiced
Method
- Put water and Quinces into pot, cover and simmer for 45 mins until tender
- Remove lid and simmer until reduced by about a third
- Add sugar and lemon juice and stir until sugar is dissolved
- Boil rapidly until setting point is reached. Top wrinkles when put on a plate
- Pour / spoon into jars when cooled
