Salmon and Zucchini Quiche

Ingredients
- PASTRY
- 150 g butter
- 300 g plain flour
- 3 tablespoons cold water
- SALMON AND ZACCHINI QUICHE
- 1 tin (420 g) salmon
- 500 g ricotta cheese
- Sliced zucchini
- 4 eggs
- 125 ml cream
- Seasoning - salt and pepper
Method
- PASTRY
- Rub butter into plain flour until it looks like bread crumbs
- Add cold water and knead into a dough
- Add flour to rolling pin and roll out pastry and place into a baking dish (or pyrex dish)
- SALMON AND ZACCHINI QUICHE
- Mix salmon and ricotta together
- Add seasoning
- Place salmon and ricotta mixture in pastry dish
- Add sliced zucchini on top of salmon mixture
- Mix eggs and cream together in a separate dish (add salt and pepper to taste)
- Pour egg mixture over the top of zucchini
- Bake in moderate oven (180 deg C) for 30 - 45 minutes
