Satay Chicken

Ingredients
- 1 Onion, sliced
- 1/2 Red Capsicum, sliced
- 1 Clove Garlic, crushed
- 1 kg Chicken Thigh fillets, sliced
- 1 Tblspn Soy Sauce
- 2 tspns Curry Powder, level
- 3 Tblspn Peanut Butter
- 2 tspns Worcestershire (Hot) Sauce
- 3 tspns Sugar
- 2 Tblspn Sweet Chili Sauce
- 2 cups Hot Water
Method
- Fry Onion, Garlic and Capsicum in a little oil
- Add Chicken and fry for 2 minutes
- Add Soy Sauce, Curry, Peanut Butter, Hot Sauce, Sugar and Sweet Chili Sauce to a jug and mix well
- Add Hot Water and combine, then add to pan
- Simmer approx. 20 minutes until Chicken is cooked
- The sauce will thicken as it cooks
