Saucy Lemon Pudding

Ingredients
- 2 cups milk
- 2 tablespoons plain flour
- 2 eggs (separated)
- 1 tablespoon butter
- Grated rind from 2 lemons
- Juice of 1 lemon
- 3/4 cup sugar
Method
- Cream butter and sugar together
- Add egg yolks, lemon rind and lemon juice
- Then add flour and mix well
- Beat in milk
- Beat egg whites until stiff
- Fold egg whites into mixture
- Pour mixture into a greased 20 cm (8") deep oven proof dish
- Stand oven proof dish into a shallow pan of hot water
- Bake in moderate oven (180 deg C) until set
