




Semi-dried Tomatoes

Ingredients
- Small tomatoes
- Salt, pepper and dried Thyme leaves
- Olive or Garlic Oil
Method
- Preheat oven to 150 degrees C
- Line a baking tray with non-stick paper, then place a wire rack on paper
- Cut tomatoes in half lengthways and arrange cut side up on the rack
- Season with salt, pepper and thyme
- Bake in oven for 3 hours so that tomatoes are dry on sides but soft in the middle
- Set aside to cool completely
- Place in airtight containers and cover with olive or garlic oil
