




Slow Cooked Roast Wild Duck

Ingredients
- 4-6 Ducks
- 200 ml Olive Oil
- 1 cup Chicken Stock
- 4 Bay Leaves
- 1 tspn Mixed Herbs
- 6 Tblspn Soy Sauce
- Salt & Pepper
- 4 Cloves crushed unpeeled Garlic
- Pinch of Oregano
- STUFFING
- Tomato
- Onion
- Bacon
Method
- STUFFING
- Cook sliced tomato and onion until soft
- Add diced/chopped bacon and cook until juices are reduced to a nice consistency
- DUCKS
- Prepare Ducks and stuff with Tomato, Onion and Bacon mix - stuffing
- Heat oven to 200 Degrees C
- Mix all other ingredients together and halve between 2 Oven Bags
- Place Ducks in bags and seal
- Make a small hole in bags near tied end and turn ducks at halfway mark
- Cook approx 30 mins, then reduce heat to 120 degrees, and cook another 3 hours
- Open bags and turn up oven to 200 degrees for 20 mins to brown- optional
